- 3–4 large ripe bananas, mashed
- 1 ½ cups all-purpose flour
- ½ cup packed light brown sugar
- ½ cup (1 stick) unsalted butter, melted
- 1 large egg
- 1 teaspoon baking soda

- 1 teaspoon vanilla bean paste
Instructions
- Step 1: Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×5-inch loaf pan, or line with parchment paper leaving an overhang.
- Step 2: In a large bowl, thoroughly mash the ripe bananas with a fork until mostly smooth but with a few small lumps remaining. Stir in the melted butter, brown sugar, egg, and alcohol-free vanilla extract until well combined.
- Step 3: In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula until just combined. Be careful not to overmix the batter, as this can lead to a tough banana bread.
- Step 4: Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-65 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean.
- Step 5: Let the banana bread cool in the loaf pan on a wire rack for 10-15 minutes before carefully removing it from the pan. Allow it to cool completely on the wire rack before slicing and serving for the best texture.
