- ½ cup whole milk

Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan. In a medium bowl, whisk together the all-purpose flour and baking powder. Set aside.
- Step 2: In a large bowl, using an electric mixer, cream together the softened unsalted butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla powder.
- Step 3: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the whole milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix. Gently fold in the finely chopped maraschino cherries (and 1-2 tablespoons of reserved cherry juice, if desired, for extra color and flavor).
- Step 4: Pour the batter into the prepared cake pan and spread evenly. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Step 5: Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely. Once cool, it can be frosted or served plain.
