Instructions
- Step 1: Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×5 inch loaf pan, or line with parchment paper. In a medium bowl, mash the overripe bananas thoroughly with a fork until mostly smooth with a few small lumps remaining.
- Step 2: In a large bowl, whisk together the melted butter and granulated sugar until well combined. Beat in the egg and alcohol-free vanilla extract until the mixture is smooth. Stir in the mashed bananas until evenly incorporated.
- Step 3: In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt until there are no visible lumps and the dry ingredients are evenly distributed.
- Step 4: Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula or wooden spoon until just combined. Be careful not to overmix the batter; overmixing can result in tough banana bread. A few small lumps are perfectly fine.
- Step 5: Pour the batter evenly into the prepared loaf pan. Bake for 50-65 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean with no wet batter clinging to it.
- Step 6: Allow the banana bread to cool in the loaf pan on a wire rack for 10-15 minutes. Then, carefully remove it from the pan and transfer it directly to the wire rack to cool completely before slicing and serving.
