Description

Craft incredibly moist, foolproof banana bread with ease! This beginner-friendly recipe transforms overripe bananas, melted butter, and a single egg into a perfectly sweet, quick loaf.

Ingredients

Scale
  • 34 medium overripe bananas (about 1.5 cups mashed)
  • 1.5 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla powder
  • 1/2 teaspoon salt

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×5 inch loaf pan, or line with parchment paper. In a medium bowl, mash the overripe bananas thoroughly with a fork until mostly smooth with a few small lumps remaining.
  2. Step 2: In a large bowl, whisk together the melted butter and granulated sugar until well combined. Beat in the egg and alcohol-free vanilla extract until the mixture is smooth. Stir in the mashed bananas until evenly incorporated.
  3. Step 3: In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt until there are no visible lumps and the dry ingredients are evenly distributed.
  4. Step 4: Gradually add the dry ingredients to the wet ingredients, mixing gently with a spatula or wooden spoon until just combined. Be careful not to overmix the batter; overmixing can result in tough banana bread. A few small lumps are perfectly fine.
  5. Step 5: Pour the batter evenly into the prepared loaf pan. Bake for 50-65 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean with no wet batter clinging to it.
  6. Step 6: Allow the banana bread to cool in the loaf pan on a wire rack for 10-15 minutes. Then, carefully remove it from the pan and transfer it directly to the wire rack to cool completely before slicing and serving.

Notes

  • Store your banana bread at room temperature in an airtight container for up to 3 days, or refrigerate for a week to keep it perfectly moist.
  • For a warm, comforting treat, gently reheat individual slices in a toaster oven or microwave for 15-30 seconds until just fragrant.
  • Serve a slice plain with your morning coffee, or elevate it with a dollop of whipped cream or a generous smear of cream cheese.
  • For the most flavorful and moist loaf, ensure your bananas are truly overripe with plenty of brown spots; they provide natural sweetness and a deeper banana essence.
