Description

Craving summer’s vibrant flavors? This Fresh Cucumber Tomato Salad delivers crisp cucumber, juicy tomatoes, zesty red onion, and fragrant dill.

Ingredients

Scale
  • 2 medium cucumbers, about 1 pound
  • 23 medium ripe tomatoes, or 1 pint cherry/grape tomatoes
  • 1/4 small red onion
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Step 1: Prepare the vegetables. Wash and trim the cucumbers, then slice them into half-moons or dice them into bite-sized pieces. Wash and core the tomatoes, then cut them into wedges or halve cherry tomatoes. Peel and thinly slice the red onion.
  2. Step 2: Chop the fresh dill. Finely chop 2 tablespoons of fresh dill.
  3. Step 3: Combine salad ingredients. In a large serving bowl, gently combine the sliced cucumbers, tomatoes, and red onion. Add the chopped fresh dill.
  4. Step 4: Whisk the dressing. In a small bowl, whisk together the extra virgin olive oil, red grape vinegar, salt, and black pepper until well combined.
  5. Step 5: Dress and serve. Pour the prepared dressing over the vegetables in the large bowl. Toss gently to ensure all ingredients are evenly coated. Taste and adjust seasoning if needed.
  6. Step 6: Serve immediately. For best flavor and texture, serve the salad fresh as a refreshing side dish.

Notes

  • For optimal freshness, enjoy this vibrant salad immediately; if you anticipate leftovers, store any undressed components separately and combine just before serving to prevent sogginess.
  • No need to reheat this refreshing salad; it's designed to be enjoyed chilled, so simply give it a gentle toss from the fridge if stored and serve cool.
  • This light and zesty salad is the perfect counterpoint to rich grilled meats or fish, and makes a fantastic healthy addition to any picnic or BBQ spread.
  • To keep your salad delightfully crisp and prevent it from becoming watery, add the salt and pepper and toss with the dressing right before serving, as salt draws moisture from the cucumbers and tomatoes.
