Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or spray with non-stick baking spray. Drain the maraschino cherries, reserving 2 tablespoons of the juice, and chop the cherries finely.
- Step 2: In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time, mixing well after each addition, then stir in 1 teaspoon of alcohol-free vanilla extract.
- Step 3: In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the whole milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
- Step 4: Gently fold in the chopped maraschino cherries and the reserved 2 tablespoons of cherry juice into the cake batter until evenly distributed.
- Step 5: Pour the batter into the prepared cake pan and spread evenly. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Step 6: Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
