Description
Juicy strawberries meet crisp cucumber, bright mint, and zesty lime in this ultimate summer refreshment. Prepare this vibrant, no-cook salad effortlessly.
Ingredients
Scale
- 2 cups fresh strawberries, hulled and sliced
- 1 large English cucumber, thinly sliced or diced
- 1/4 cup fresh mint leaves, finely chopped
- 2 tablespoons fresh lime juice
- 1 tablespoon extra virgin olive oil
- 1 teaspoon honey or maple syrup
- 1/4 teaspoon sea salt
Instructions
- Step 1: Wash and prepare the produce. Hull and slice the fresh strawberries into bite-sized pieces. Wash the English cucumber and slice it into thin rounds or dice it, according to your preference. Place both the strawberries and cucumber into a large serving bowl.
- Step 2: Finely chop the fresh mint leaves and add them to the bowl with the strawberries and cucumber.
- Step 3: In a small separate bowl, whisk together the fresh lime juice, extra virgin olive oil, honey (or maple syrup), and sea salt until the dressing is well combined.
- Step 4: Pour the prepared dressing over the strawberry, cucumber, and mint mixture in the large serving bowl.
- Step 5: Gently toss all the ingredients together until the strawberries, cucumber, and mint are evenly coated with the dressing.
- Step 6: Serve the Strawberry Cucumber Salad immediately for optimal freshness, or chill it in the refrigerator for 15-20 minutes before serving for an extra refreshing experience.
Notes
- Store any leftovers in an airtight container in the refrigerator and aim to enjoy them within 24 hours, as the cucumber will start to release water, slightly softening the salad.
- Since this is a refreshingly cold dish, there's no reheating needed; simply give it a quick stir and serve straight from the fridge for maximum chill and crispness.
- This bright and light salad is a fantastic accompaniment to grilled chicken or fish, a delightful addition to any summer BBQ spread, or even a refreshing palate cleanser on its own.
- For an extra burst of fresh flavor, consider adding a tiny pinch of red pepper flakes to the dressing for a subtle kick, or swap a regular cucumber for an English one to avoid the need for peeling or seeding.
